weekend recap


This past weekend, Ryan and Megan came to town for the Utah game! We had so much fun tailgating and going to the game together.. we wish we all lived closer so we could hang out more! Our turn to head to Chicago (hopefully sooner than later)!

new obsession

I'm officially addicted. I have been missing dance lately, having danced my entire childhood and I think I found the perfect workout to get back a lean dancer's body. It's a perfect combination of ballet technique and pilates.

mmm...looks delicious


Yesterday while blog-stalking one of my favorite blogs (How Sweet It Is), I found the most amazing recipe for Pumpkin Chocolate Chip Pie. Literally, my mouth was watering reading about it. I think I email shared it to 20 ppl! Now, I just have to perfect it by Thanksgiving so I have something to contribute to my mom's most amazing cooking.

Pumpkin Chocolate Chip Cookie Pie

makes one 9-inch pie

2 large eggs

1/2 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 cup butter, melted and cooled to room temperature

1/3 cup pureed pumpkin

2 teaspoons vanilla extract

1 tablespoon + 1 teaspoon pumpkin pie spice

1 cup chocolate chips

1 unbaked pie shell

whipped cream or ice cream

Preheat oven to 325 degrees F.

In the bowl of an electric mixer, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Add in vanilla extract, pumpkin and pumpkin pie spice and mix until combined.. Blend in melted butter. Toss chocolate chips with a sprinkling of flour and fold into batter. Pour into an unbaked 9-inch pie shell. Bake for 55 minutes, or until center is no longer jiggly.

Serve warm with ice cream or whipped cream.
